Mary Beth received her undergraduate degree in dietetics and nutrition from the University of Central Missouri. She attended the University of Kansas Medical Center to complete her dietetic internship and Master of Science degree. For the past 5 years she has had the opportunity to work with ketogenic patients exclusively and has over 25 years of experience as a registered dietitian. She developed the ketogenic diet program here at Dell Children’s. During development, she visited John Hopkins Hospital to observe direct patient care with Dr. Eric Kosshoff and his ketogenic diet team. In addition, she has worked with Beth Zupec-Kania, RD participating in education for an international conference.
Participating with the ketogenic diet program is very rewarding for Mary Beth and it provides great satisfaction knowing she can teach families to alter their diet to help control their children’s seizures.
She likes to spend her free time with her family and friends and enjoys traveling and camping.
